There are many Christmas cake recipes out there, but there is nothing more classic than this one from my mother in law ! Try it out and let us know your family’s reaction after this Christmas treat.
Chop the dry fruits and raisins.
Soak in brandy atleast 24 hours in advance.
Sieve the flour with baking powder and other powdered spices.
Beat the fat with sugar till smooth and fluffy.
To the above, add well beaten eggs.
Caramelise 100 gms of sugar and 1/4 cup of water to get a brown syrup.
To the fat, sugar and egg mixture, add the flour and caramel syrup.
Add nuts and pour into a mould lined with greased paper and cook at 150 degree C or 2-3 hours till done.
