There are many Christmas cake recipes out there, but there is nothing more classic than this one from my mother in law ! Try it out and let us know your family’s reaction after this Christmas treat.

- 250 gms flour
- 200 gms sugar
- 250 gms butter half ghee and half butter
- 100 gms sugar for caramel
- 1.5 tsp baking powder
- 1/4 tsp Cardamom powder
- 1/2 tsp cinnamon powder
- clove powder of 5 cloves
- 1 tsp Nutmeg
- 1 cup Dry Fruits
- 1/2 tsp vanilla essence
- 1/2 tsp Almond essence
- 1/2 cup Brandy or Rum

Instructions
- Chop the dry fruits and raisins.
- Soak in brandy atleast 24 hours in advance.
- Sieve the flour with baking powder and other powdered spices.
- Beat the fat with sugar till smooth and fluffy.
- To the above, add well beaten eggs.
- Caramelise 100 gms of sugar and 1/4 cup of water to get a brown syrup.
- To the fat, sugar and egg mixture, add the flour and caramel syrup.
- Add nuts and pour into a mould lined with greased paper and cook at 150 degree C or 2-3 hours till done.
