NO BAKE INSTANT MINI PIZZA RECIPE:
Serves 3 to 4
Bread (preferably wholemeal) – 4 slices
Eggs – 2
Salt to taste
Pepper – ¼ tsp
A pinch of mustard powder
Pizza Sauce – 3-4 tsp
Cheese – ½ cup, grated (cheddar and/or mozzarella and/or parmesan)
Capsicum, Red and yellow bell peppers – a few pieces, diced or cut into shapes if desired
Ham slice – 1, cut into small pieces or shapes if desired
Oil – A few teaspoons
In a bowl, crumble the slices of bread to small bits.
Add the eggs, mustard powder, salt and pepper and mix well to form a thick mixture.
Heat a non-stick pan (with a lid) and put a teaspoon of oil.
Now take a big spoonful of the mixture and put on the pan. Shape it round , about 3 inches in diameter and half inch thickness.
Cook on one side completely, and then flip gently to cook the other side.
After flipping, put the cheese, peppers and ham on the cooked side. Cover the pan for a minute to allow the cheese to melt.
Remove onto a serving dish and serve hot. Sprinkle some oregano or mixed Italian herbs on the pizzas if desired.
Tip: You can use tomato ketchup instead of Pizza sauce. The quantity may vary depending upon the size if bread and eggs used. You can use other toppings of your choice.
Pizza Recipe Variation:
You can use a spinach spread by keeping aside some of the Spinach Puree when making Palak paneer at home (Keep aside before cooking it in oil and Indian Spices). This is be a very healthy spread and will taste great with the cheese on top.
