Ingredients
- 30 gms butter
- 1 tin pineapple slices
- 30 gms brown sugar
- 12 no glazed cherries
For Cake:
- 150 gms flour
- 1/2 tsp baking powder
- 100 gms Castor Sugar
- 2 no eggs
- 100 gms butter
- 5 tbsp milk
- 1/2 tsp ground cinnamon
- 1 pinch salt

Instructions
For the topping:
- Cream butter and brown sugar together.
- Spread on bottom of a 9X6 inches tin.
- Arrange well drained pineapple slices on this and fill centres with glazed cherries.
For the Cake:
- Sift flour, baking powder, salt and cinnamon together.
- Cream butter and sugar together till light and fluffy.
- Gradually add beaten eggs to the creamed mixture.
- Fold in the sifted flour, baking powder, salt and cinnamon mixture alternately with milk.
- Bake at 180 degrees for 40-50 minutes.
- When done, leave it to cool for 5 - 10 minutes.
- Turn it out upside down on a wire rack.
- Decorate with blanched almonds or walnuts.
- Serve warm or cold !
